“We get up before sunrise and start our trek through the Blue Mountains of Jamaica. As our journey continues, the morning dawns and the faint scent of salt water lingers the air. I can hear the sound of distant waves crashing on the sandy shoreline and although I can’t see the great ocean from the trail, I can sense it’s vastness and expanse and I am left in awe.
As the day unfolds, I can begin to see why they call these mountains Jamaica Blue – it seems an endless layer of dense mist hovers over and around the mountains giving them a mysterious and dreamy bluish cast. We pushed further and further into the rainforest, making our way across rugged terrain, precarious bridges that tested the faith of even the most devout of us, and through the dense growth of trees and underbrush that afforded us only a glimpse now and then of the expansive views of the beautiful Jamaican coastline.
Early afternoon is upon us as we finally make it to the plantation to cup this humble coffee farmer’s magic brew. I think back to when the first seedlings were brought here to Jamaica in 1728 by Sir Nicholas Lawes and how this ground that I am reverently standing on has been producing the hands-down best and absolute finest coffee in the all of the world. The scent of rich coffee breaks my reverie as a simple cup of steaming hot brew is placed in my hands. My senses are alive and I can smell the mild mellow aroma with what seems to be a faint hint of delicate fruit and sweet chocolate....I realize I am salivating as I put the cup to my lips and take the first sip of what the world calls the best coffee on earth. I am left speechless...."
Coffee beans pick up the flavor and aroma of the environment they grow in – moisture, soil and even fruit trees nearby that drop their fruit near the roots of the coffee tree can influence the flavor of a coffee bean as it grows. This tends to produce a denser, more flavorful arabica coffee that is still both soft and mild.
